Born in Cebu City, Philippines, to a Cornish father and a Filipino mother, I moved to Cornwall at the age of 10 to be with my dad. To say I had a culinary culture shock is an understatement! I really missed my Asian flavours back then, as Cornwall didn’t have the variety it does now. Having been here for 36 years, my palate has evolved from predominantly Asian to loving food from all over the world, and I’ve fully embraced my Cornish side—yet my tastes will always gravitate towards Asian flavours.
After living in Bristol for 24 years of my adult life, I returned to Cornwall 3 years ago. I worked (and still work) as a private chef, but I felt I needed to do more. Last July, I decided to open an Asian fusion café in Wadebridge because I wanted to share my cuisine with the Cornish community. Filipino food is generally overlooked, and that’s why I wanted to blend both of my heritages—Filipino and Asian—cooked authentically with a modern twist, using the finest Cornish produce.
